Veg Manchow Soup

Ingredients

Noodles(boiled)- 1 cup
Oil - 2 tsp
Garlic - 2 cloves
Spring onions (chopped)- 2
Ginger garlic paste
Green chilli - 4 + 1(for garnishing)
Carrot (chopped) - 1 cup
Bell pepper (Chopped) - 1/2 cup
Tofu - 1/2 cup
Mushroom- 1/4 cup
Vegetable stock - 1 cup
Salt  and pepper to taste
Soya sauce- 1 tbsp
Chilli sauce- 1 tbsp
vinegar - 2 tsp
Corn Starch - 1 tbsp
sugar - 1 tsp
Tomato ketchup - 1 tbsp


Preparation

Deep fry the boiled noodles till golden and keep aside

In a pan, add oil and heat for a few minutes
Add garlic and spring onions
Add ginger garlic paste and green chilli and cook for some time
Add carrots and bell pepper, tofu and mushroom and cook for some time
Add vegetable stock and water and let it boil
add salt,pepper,chilli sauce, soya sauce , sugar, ketchup and vinegar to it
mix corn starch in a bowl of water and mix in soup
Boil for some time

Add spring onion and fried noodles before serving

Hot and Sour Mushroom soup

Ingredients

Vegitable stock (can be prepared by grinding mixed veg and adding water )- 2 cups
Onion (chopped)- 1 small
Mushroom (chopped) - 5
Soya sauce - 1 tbsp
Lemon juice- 1 tbsp
Sugar - 2 tsp
Red chilli powder - 1 tsp
Corn flour - 1 tsp
oil- 2tsp
Salt and pepper to taste

Preparation

Heat oil in a pan and fry onions
Add mushroom and stock salt and pepper and bil till the mushroom is done
Add sugar and chilli powder and stir
Add soya sauce, veniger and lemon juice and stir
Mix corn flour with 1 tbsp water and make a paste
Add the paste to the soup
Serve hot

Gobi Manchurian

Ingredients
cauliflower florets - 3 cups
Corn flour - 1 cup
Garlic - 7-8
spring onion (chopped) - 1/2 cup
green chilli (chopped) - 2
Soya sauce - 1 tbsp
Tomato ketchup- 1 tbsp
Venoger - 1 tsp
oil for frying
salt and pepper to taste
Preparation
Mix cauliflower florets, corn flour , salt and pepper  and add some water to it
Fry the florets and soak excess oil

keep aside
In a pan , heat 2 tsp of oit.
Add garlic and chillis
Add spring onion and cook for 5 minutes
add the sauces and mix
Add florets and cook for 5 minutes

Serve with noodles or fried rice or as appetizer

Mixed Veg Munchurian

Ingredients
For Munchurian
Cabbage (Grated) - 1/2 cup
Carrot( grated) - 1/2 cup
Corn flour - 2 tbsp
Salt - taste
green chilli(chopped)- 1
Oil for frying

For Gravy
vegitable stock( optional)
onion (finely chopped)- 1/2
green chilli (finely chopped) - 1
Ginger Garlic paste - 1 tsp
soya sauce - 1 tbsp
veniger - 1tsp
Corn flour - 2 tsp

Preparation

Munchurian


Squeeze grated vegetables to remove extra water. This can be used in place to vegetable stock.
mix all ingredients and make balls

Fry the balls in medium flame
Fry till the balls are golden brown.Soak oil in a kitchen towel
Gravy
Heat oil in a pan, Add onion, chilli and ginger garlic paste and fry till it is golden brown
In a bowl, combine vegetable stock, soya sauce and veniger
Add the mixture to the pan
Add salt

in a bowl, make a thick paste of water and corn flour
Add it to the pan and stir
Cook for 5 minutes and add Munchurian balls

Veg Momos

Ingredients
For dough
All purpose flour - 1 cup
Water to knead
1 tsp oil
For filling
Cabbage(shredded)- 1 cup
oil - 1 tbsp
Carrot (shredded) - 1
Onion (chopped)- 1/2
Chilli (chopped)- 2
ginger garlic paste- 1 tsp
Red chilli powder  - 1/4 tsp
Pepper - 1/8 tsp
Soya sauce - 1 tbsp
Veniger - 1 tbsp
salt - to taste
For chutney
Tomato (pureed)- 2
Ginger paste- 1 / 2 tsp
Garlic - 4 cloves 
Green chilli (chopped)- 1
Soya sauce - 1 tbsp
Veniger - 2 tsp
Oil- 1 tbsp
salt - to taste
Red chilli powder- 1 tsp


Preparation
For dough 

Knead Dough from flour and water .
Spread oil on the dough and keep aside
For filling
heat oil in pan.
Add onion, chilli and ginger garlic paste in it
Add Cabbage and carrots

Cook for 5 minutes
Add salt,pepper and red chilli powder
Add soya sauce and veniger
cook for a few minutes and keep aside

Dumpling
make small balls from the dough
roll the balls to make a  round roti

Fill the filling in it

cover it giving the shape of momo
Boil water in a steamer. and grease the tray of steamer
place momos in the steamer. the moms should not touch each other

steam momos for 10- 15 minutes. Remove from steamer when done
chutney

Puree peeled tomatoes and garlic 
Heat oil in a pan
Add tomato puree to the pan
add green chilli , red chilli powder and salt and cook till it separates from oil
 Add veniger and soya sauce and cook for 1 - 2 minutes
Serve Momo with chutney

Fried Rice

Ingredients:
Chilli - 2
Onion (sliced) - 1
Ginger and garlic paste - 1 tsp
Mixed veg (mushroom,cabbage, carrot )- 1 cup

Ajinomoto- 1/2 tsp
rice - cooked- 2 cups

Salt
oil - 2 tbsp
heat oil and add  chilli, ginger and garlic
Add onion and mixed veg


cook till the vegetables are fried

Add rice
cook for a few minutes

serve with Manchurian or Schezwan Sauce

Schezwan sauce

Ingredients
Red chilli (soaked in warm water for 1/2 hour)- 2
Onion (cubed)- 1
Ginger- 1 in
Garlic- 2
oil- 1 tsp
sugar - 1/2 tsp
ajinomoto- 1/2 tsp
salt to taste

Soya sauce
Tomato kechup
veniger
Chilli sauce
corn flour

Preparation
heat oil in a pan and add ginger garlic and onion to it.cook till onion is golden brown.
Grind the onion, ginger and garlic and red chili to paste.
Transfer the paste to the pan and cook for some time

Add the sauces, sugar , salt and ajinomoto to the pan

add some water and corn flour and cook for a few minutes
cook for some time and serve with fried rice or noodles
